Spicy Vegetable Stew

Ingredients:

1 onion (very large) chopped
1 Swiss chard bunch
1 can Garbanzo beans (known also as chick-peas)
1/2 cup Raisins
1/2 cup Rice, raw
2 Yams
Several fresh tomatoes (or large can)
1 Garlic clove
Salt and pepper, to taste
Tabasco sauce, to taste

Instructions:

Fry the onion garlic and stems of chard in a pan.  Add in the chopped greens and fry a little bit longer to get cooking.  Slice the yams in thick slices and add those to the pan along with garbanzo beans and tomatoes.  Season to taste with salt and pepper.  Allow this to cook for 10 to 15 minutes.  Make a well in the center (you know, like you did with your mashed potatoes when you were a kid). Put the rice in the well making sure the liquid in the pan covers it.   Put the lid on and allow cooking for another 30 minutes.  Serve with Tabasco sauce!
