Orange Glazed Carrots

Ginger not only livens up so many recipes but it also is used to ward off colds and flu!!

Ingredients:

1 pound of fresh or thawed frozen baby carrots
1/3 cup of orange marmalade
2 tablespoons of butter
2 teaspoons of Dijon style mustard
1/2 teaspoon of grated fresh ginger

Instructions:

Cook carrots in saucepan and drain or steam them, whichever you prefer.  Return carrots to saucepan and stir in the butter, mustard, marmalade and ginger.  Mix well.  Simmer on medium setting stirring frequently until carrots are glazed.
